Island in the Sky Cocktail

Ingredients:

• SodaStream sparkling water

• Handful of sage

• 25 ml simple syrup

• 25 ml lime

• 25 ml pineapple puree

• 45 ml aged rum

• 15 ml yellow chartreuse

Method:

• Fizz cold fresh water with SodaStream sparkling water maker

• In a cocktail shaker, shake all the ingredients vigorously

• Double strain through a fine sieve and top with SodaStream sparkling water

• For simple syrup: Use equal parts granulated white sugar to hot water and stir until fully dissolved

• Garnish with sage, edible flowers

• Serve in a highball glass
